Divine Grain- Free Banana Bread created by Anais from Cook with Anais
What do you do when you receive an "off the charts" delicious grain- free banana bread recipe from the fabulous Anais Goldberg? (who by the way, is a magician with ingredients)

Here it is~
List of ingredients:
3 over ripe bananas
3 pasture eggs
1/4 cup MCT oil (Bulletproof)
1/4 cup ghee melted
2 tbsp Three Peaks Manuka Multifloral Blend Honey (found here at Love From New Zealand)
3/4 cup almond flour
1/2 cup cassava flour
1/4 cup coconut flour
1/2 tsp fine Himalayan salt
1/2 tsp Heilala Vanilla ground vanilla powder (found here at Love From New Zealand) or 1 tsp Heilala Vanilla extract or paste (also found at LFNZ)
2 tbsp acacia fiber (optional)
1 tsp baking powder
1 1/2 tsp baking soda
3 tbsp milk or mylk of your choice (why not try V&V Sunflower Mylk)
1/2 cup Lily's chocolate chips (optional)
1/2 cup chopped walnuts (optional)
Preheat oven to 350. Line a standard loaf pan with parchment paper. To help parchment paper stay in place, you may first grease the pan with coconut oil or ghee or butter and place paper over it.
In a medium- sized bowl whisk together bananas, eggs, MCT oil, ghee,(make sure ghee isn't hot) and Manuka blend honey.
In a larger bow, combine all dry ingredients and stir well. Pour contents of medium bowl (the wet ingredients) into larger bowl (the dry ingredients), gently stirring with a spatula as you pour. Add milk (mylk) and vanilla and stir. Add chocolate chips and /or walnuts if using.
Pour batter into loaf pan and bake for one hour.
**These also make great mini muffins- just grease mini muffins tin or use paper liner. Bake at 375 for 15 mins.
